Crafting Sustainable Menus for Reason Restaurant
Reason restaurant is chef Jan Horák’s signature fine dining spot. It sits on the eleventh floor of Masaryčka, a building designed by Zaha Hadid Architects, right above Prague’s historical center. From up there, you get sweeping views of the city while experiencing a sophisticated gastronomic journey that blends creativity, sustainability and contemporary elegance, connecting Czech traditions with broader European flavors. Everything about the place is intentional. Which means the details down to the menu covers had to match that vision.
How We Got Involved
Kallon Studios, an international design and architecture studio founded by Vasilios Apostolou and Nikoleta Apostolou, was responsible for Reason’s branding, architectural study and detailing the entire space. They were looking for print solutions that felt different. Something that would stand out and fit the restaurant’s philosophy. That’s how they found us at Masterfold. When we sat down with Vasilis and Nikoleta from Kallon Studios, they walked us through what they were building. We talked about different options, coasters, paper menus, the usual suspects. But then we showed them our wheat husk menu covers. We ended up creating a full collection of products for Reason. Coasters, paper menus and other touchpoints that would shape the dining experience. But it was the wheat husk board menu that became the centerpiece of this collaboration.
Why Wheat Husk Made Sense
The material itself is made from 100% upcycled wheat husks. It’s sustainable, which aligned perfectly with Reason’s values. It also has this raw, textured look that feels unique without trying too hard. They liked it immediately. But the standard design we had wasn’t quite right for what they needed. The menus had to feel elevated, refined, something that could hold its own in a fine dining setting. So we brought in Brand Master, our branding studio to create a custom version.
The Design Evolution: Brand Master Reimagines Wheat Husk
The brief was straightforward: keep the wheat husk material and sustainable approach but add corner mounts so the menu pages would sit cleanly inside. Our designers started by preserving what made the original design work: The combination of 4mm wood on the back and wheat husk on the front. This way, the material stays visible to customers as they read the menu. Instagram-worthy, if we’re being honest. For the restaurant’s logo, we went with laser engraving. It gives you sharp, clean lines while keeping the whole thing natural and chemical-free. The corner mounts were the interesting part. Instead of metal clips or plastic, we used rope. Simple, tactile and completely in line with the craftsmanship we wanted to communicate. It also keeps the menu pages visible and easy to handle.
Making the Menus by Hand
Once approved, the design for two menu sizes moved into production. We sourced upcycled wheat husks, an agricultural by-product collected from grain processing. These husks, which would otherwise be discarded, became the foundation of the menu covers. While preparing the husks, we were also working on the wood base. Each board was cut, engraved and finished until the surface was smooth and ready. Then came the assembly and this is where everything happened by hand. We applied an ecological adhesive to one side of the wood, a glue made without synthetic resins. It’s odorless and safe enough to handle with bare hands, which matters when you’re working manually. We carefully spread the wheat husks across the glued surface, covering it evenly by hand. Then we let everything rest for a few days so the bond could set properly. After that, the boards went through a press. This created a compact, solid surface and locked the husks in place. Next, we baked them at high temperatures. This step strengthened the material and brought out the natural texture. Once they cooled down, we moved to the final stage. Finishing and polishing the entire surface by hand until it was smooth to the touch. The last step involved threading the rope through pre-drilled holes at each of the four corners, securing the corner mounts in place. Every knot, every detail, done by hand. And that’s it. The menu covers were ready.
Ready for Prague
The menus in two different sizes were packed and ready to ship to Prague, where they would become part of Reason Restaurant’s story. This project opened a new chapter for us and we want to say thank you. To Kallon Studios for trusting us with their vision and to Brand Master for pushing the design forward. The wheat husk surface, a sustainable material that transforms agricultural waste into something durable and tactile felt like the right fit from the start. These menu covers embody what we believe in: thoughtful design that belongs and endures.

“Sustainability is a fundamental pillar and is woven through everything we create at Reason. Menu covers in a sustainable version made from grain are a stylish complement to our setup and the cherry on the cake of the whole concept.”
And this is just the beginning. We’re currently working on new sustainable surfaces made from olive leaves, oregano and seashells. Natural materials that carry the essence of Mediterranean heritage into every detail. Let’s see what stories these surfaces will tell.
